Ingredients:
1 box Uncle Ben's Fast & Natural Whole Grain Brown Rice
2 tablespoons olive oil
1 onion (diced)
Tyme (few sprigs)
1 Bay Leaf
Salt
Pepper
Adobo
1/2 cup dried cranberries
(more if desired)
1/2 cup Pinioli Nuts
1 cup of Champagne
1 container of low fat, low salt Chicken Stock
1 hand full of grated cheese
(your choice of cheese)

Directions:
In a non stick pan on high heat toast Pinioli Nuts (no oil needed...watch nuts they can burn fast..take out of pan when done and set aside). In a non stick skillet on med heat add olive oil , one bay leaf and a few sprigs of fresh tyme and diced onion. Sweat diced onion with a dash of salt until translucent. Then add 1 box of brown rice and stir to coat rice with olive oil and onions..cook a few minutes so rice can develope it's flavor, then add 1 cup of champagne, let simmer for about one minute sprinkle pan with Adobo and add chicken stock so it covers the rice. Cover pan and let cook on med heat until rice is tender (add more stock if needed while cooking)...about 15 min. When rice is cooked take skillet off heat and add one hand full of grated cheese , pinioli nuts and 1/2 cup dried cranberries and mix thru with a folk and taste. Season with salt & pepper if needed.
